Lemon Poppy Seed Muffins Recipe

Ingredients
  • 2 tablespoons ground flaxseeds
  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup milk
  • ¼ cup vanilla yogurt
  • ¼ cup coconut oil
  • 2 lemons
  • 2 tablespoons poppy seeds
  • 1 cup powdered sugar
Directions
  1. Preheat oven to 350 F.
  2. Line a muffin tin with paper liners or spray with cooking spray, and set aside.
  3. In a small bowl mix, mix flaxseeds with 5 tablespoons water until combined. Set aside.
  4. In a large bowl, combine flour, granulated sugar, baking powder, baking soda, and salt.
  5. Zest and juice the lemons, reserving 1 tablespoon + 2 teaspoons lemon juice for the glaze. (The rest will be used for the muffin batter.)
  6. In a medium bowl, combine milk, yogurt, coconut oil, lemon zest, lemon juice, and the flaxseed mixture.
  7. Add the milk mixture to the bowl with the flour mixture.
  8. Stir in the poppy seeds until combined.
  9. Fill each muffin cup about ¾ of the way with batter, then bake for 25 minutes.
  10. Meanwhile, combine the reserved lemon juice and powdered sugar until smooth, adding a little water, if needed, for a thinner consistency.
  11. Once slightly cooled, drizzle muffins with icing and garnish with extra lemon zest, if desired.
  12. Serve the muffins.
