Pig Out
Every year, Oliveto's tribute to pork, the Whole Hog Dinners, is guaranteed to sell out. With such dishes as choucroute garni, an antipasto of tongue with artichoke and black truffle, and wild boar spare ribs, it's little wonder. One of the iconic dishes of Italy's Piedmont region is bollito misto, a panoply of long-simmered meats served with a range of zippy condiments. At Poggio in Sausalito, chef Peter McNee faithfully recreates the tradition for a special menu ($19) this week: He even imported bollito misto's classic tableside cart.
