To toast his new role at Tasting Table, PDT mixologist Jim Meehan mixed up a big cold pitcher of wheat beer, cassis and an old-school French apéritif called Byrrh. He calls the fizzy, sunset-colored punch a Beer Cassis. We call it the Official TT Drink of Summer.

If you get the ingredients nice and cold before mixing, consider adding ice to the individual glasses instead of the pitcher.

Beer Cassis

Ingredients

4 ounces Byrrh, chilled

1 ounce Cassis, chilled

1 750ml Belgian-style Strong Pale Ale, preferably Brooklyn Local 1

Ice

Lemon slices, for garnish

Orange slices, for garnish

Directions

In a pitcher, combine the Byrrh, Cassis, beer and ice. Using a wooden spoon, mix until well chilled. Garnish with lemon and orange slices. Serve.
