Shortcut Chicken and Dumplings Recipe

Ingredients
1 rotisserie chicken
3 tablespoons butter
1 small onion, finely diced
2 stalks celery, finely diced
3 tablespoons flour
3 cups low sodium chicken broth
½ teaspoon salt
1 tablespoon fresh thyme, leaves removed from stems and chopped
1 (12 oz) package frozen carrots and peas
1 (16 oz) package gnocchi
½ cup heavy cream
For garnish: chopped fresh parsley
Directions
Remove the skin from the chicken, and cut the meat away from the bones. Chop the meat into ½-inch pieces.
In a large pot or dutch oven, melt the butter over medium heat. Add the onion and celery, and cook until tender, about 4 to 5 minutes.
Stir in the flour, and let cook for 1 minute. Add the chicken broth and salt, and bring the mixture to a boil.
Once the mixture is boiling, add the thyme, carrots and peas, and gnocchi. Bring to a boil again, and cook for 3 minutes.
Add the chopped chicken and cream, and cook for 1 minute or until the chicken is warm.
Ladle the mixture into bowls, garnish with chopped parsley, and serve.
