Shortcut Chicken and Dumplings Recipe

Ingredients
  • 1 rotisserie chicken
  • 3 tablespoons butter
  • 1 small onion, finely diced
  • 2 stalks celery, finely diced
  • 3 tablespoons flour
  • 3 cups low sodium chicken broth
  • ½ teaspoon salt
  • 1 tablespoon fresh thyme, leaves removed from stems and chopped
  • 1 (12 oz) package frozen carrots and peas
  • 1 (16 oz) package gnocchi
  • ½ cup heavy cream
  • For garnish: chopped fresh parsley
Directions
  1. Remove the skin from the chicken, and cut the meat away from the bones. Chop the meat into ½-inch pieces.
  2. In a large pot or dutch oven, melt the butter over medium heat. Add the onion and celery, and cook until tender, about 4 to 5 minutes.
  3. Stir in the flour, and let cook for 1 minute. Add the chicken broth and salt, and bring the mixture to a boil.
  4. Once the mixture is boiling, add the thyme, carrots and peas, and gnocchi. Bring to a boil again, and cook for 3 minutes.
  5. Add the chopped chicken and cream, and cook for 1 minute or until the chicken is warm.
  6. Ladle the mixture into bowls, garnish with chopped parsley, and serve.
