Hearty Turkey Chili Recipe

Ingredients
1 tablespoon olive oil
1 onion, diced
1 red bell pepper, diced
3 cloves garlic, crushed
1 pound ground turkey
1 tablespoon chili powder
1 teaspoon oregano
2 teaspoons cumin
1 teaspoon paprika
1 (14.1-ounce) can chopped tomatoes
1 ½ cups chicken stock
1 (14.1-ounce) can kidney beans
salt, to taste
pepper, to taste
Directions
Add the oil to a large frying pan with high sides and cook the onion and pepper at a medium temperature for 6 to 8 minutes until softened.
Add the garlic and cook for another few minutes.
Add the ground turkey and break it down with a wooden spoon as it cooks. Keep frying until it is no longer pink.
Add the chili powder, oregano, cumin, and paprika to the pan, stir well, and cook for a couple of minutes.
Add the chopped tomatoes to the pan, then fill the can halfway with water and add that too.
Finally, pour in the chicken stock, add the kidney beans, and stir everything.
Bring the contents of the pan to a boil then simmer for about 30 minutes.
Season to taste with salt and pepper.
If desired, serve with rice and optional toppings like avocado, sour cream, and fresh chopped cilantro.
