Ingredients
2 tablespoons olive oil
4 cloves garlic, crushed
2 (14-ounce) cans peeled plum tomatoes
½ vegetable stock cube
1 teaspoon dried basil
1 teaspoon sugar
salt, to taste
pepper, to taste
Directions
Add the olive oil to a large saucepan and heat on a medium setting.
Once the oil is hot, add the garlic and fry for about 1 minute, stirring constantly.
Add all remaining ingredients and stir well to combine. Bring to a boil then reduce to a simmer and leave to cook for 10 minutes.
Transfer the sauce to a food processor or blender and pulse until the desired consistency is achieved.
Store in an airtight container in the fridge for up to 5 days.
