Spruced Up Tuna Salad Recipe

Ingredients
  • ⅓ cup mayonnaise
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 (12-ounce) can of tuna
  • ¼ of a large cucumber
  • ½ a finely diced red onion
  • 1 diced red pepper
  • 1 peeled and grated large carrot
  • ¼ cup loosely packed parsley, finely diced
Directions
  1. Add the mayonnaise, olive oil, lemon juice, Dijon mustard and some salt and pepper to taste to a large mixing bowl and stir well to combine.
  2. Add the tuna and mix well.
  3. Add all remaining ingredients and stir together.
