Spruced Up Tuna Salad Recipe

Ingredients
⅓ cup mayonnaise
2 tablespoons olive oil
Juice of half a lemon
1 teaspoon Dijon mustard
Salt and pepper to taste
1 (12-ounce) can of tuna
¼ of a large cucumber
½ a finely diced red onion
1 diced red pepper
1 peeled and grated large carrot
¼ cup loosely packed parsley, finely diced
Directions
Add the mayonnaise, olive oil, lemon juice, Dijon mustard and some salt and pepper to taste to a large mixing bowl and stir well to combine.
Add the tuna and mix well.
Add all remaining ingredients and stir together.
