- 2 large ripe mangos
- ½ red onion
- 6 cherry tomatoes
- 1 mild red chili pepper
- Juice of 1 lime
- ¼ cup cilantro (packed)
- Salt and pepper to taste
- Dice the mango into approximately 1 cm chunks, then finely dice the red onion, tomatoes, chili pepper, and cilantro.
- Add all the chopped ingredients to a mixing bowl, squeeze over the lime juice, and add some salt and pepper to taste.
- Mix well to combine.
