Pumpkin Spice Cupcakes Recipe

Ingredients
1 cup pumpkin puree
½ cup light brown sugar
½ cup granulated sugar
½ cup canola or vegetable oil
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
½ teaspoon ground cinnamon
½ cup (1 stick) salted butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla extract
3 tablespoons maple syrup
4 cups powdered sugar
Directions
Preheat the oven to 350 F and prep a muffin tin with 12 paper liners.
Combine the pumpkin puree, brown sugar, granulated sugar, canola oil, and eggs.
In a separate bowl, mix the flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
Stir the pumpkin mixture into the dry ingredients until fully combined.
Divide the batter evenly between 12 lined muffin cups.
Bake the cupcakes for 18 to 20 minutes until a toothpick inserted in the center comes out clean.
Beat the butter and cream cheese together until smooth.
Stir the vanilla extract and maple syrup into the cream cheese mixture.
Add the powdered sugar about a cup at a time, beating after each addition until the frosting reaches the desired consistency.
Frost the cupcakes once they're completely cool.
