Maple-Roasted Butternut Squash Recipe

Ingredients
8 cups chopped butternut squash
2 tablespoons olive or avocado oil
2 tablespoons maple syrup
1 teaspoon cinnamon
1 teaspoon coarse salt
½ teaspoon pepper
Directions
Preheat the oven to 400 F.
Mix the squash with the oil, maple syrup, cinnamon, salt, and pepper.
Grease a baking sheet or line it with parchment paper.
Spread the squash out in a single layer on the baking sheet.
Bake the squash for 15 minutes, then toss it with a spatula.
Bake the squash for an additional 15 to 20 minutes or until the edges are golden brown.
Optionally garnish the squash with Italian parsley and serve.
