Maple-Roasted Butternut Squash Recipe

Ingredients
  • 8 cups chopped butternut squash
  • 2 tablespoons olive or avocado oil
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon coarse salt
  • ½ teaspoon pepper
Directions
  1. Preheat the oven to 400 F.
  2. Mix the squash with the oil, maple syrup, cinnamon, salt, and pepper.
  3. Grease a baking sheet or line it with parchment paper.
  4. Spread the squash out in a single layer on the baking sheet.
  5. Bake the squash for 15 minutes, then toss it with a spatula.
  6. Bake the squash for an additional 15 to 20 minutes or until the edges are golden brown.
  7. Optionally garnish the squash with Italian parsley and serve.
