Place the chicken thighs in a large bowl. Add the olive oil, lemon juice, minced garlic, parsley, paprika, oregano, salt, and pepper. Mix well so that all the chicken is covered in the marinade.
Cover and refrigerate for at least 30 minutes. You can marinate the chicken for up to 24 hours — the longer the better.
Heat the grill or stovetop grill pan on medium heat.
Add the chicken to the grill and cook for 4-5 minutes on one side, then flip and cook for another 4-5 minutes.
