Pumpkin Streusel Muffin Recipe

Ingredients
  • 2 ¾ cups all-purpose flour, divided
  • 1 ¼ cup granulated sugar, divided
  • 2 teaspoons pumpkin pie spice, divided
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 cup pumpkin puree
  • 2 large eggs
  • ¼ cup maple syrup
  • ¼ cup vegetable oil
  • ¾ cup milk, divided
  • 2 teaspoons vanilla extract, divided
  • ¼ cup packed brown sugar
  • 6 tablespoons salted butter, melted and cooled
  • 4 ounces cream cheese, room temperature
  • ½ cup powdered sugar
Directions
  1. Preheat the oven to 375 F. Grease muffin pans or line them with cupcake liners.
  2. Stir together 2 cups of flour, 1 cup of sugar, 1 teaspoon of pumpkin pie spice, baking powder, and cinnamon.
  3. Combine the pumpkin puree, eggs, maple syrup, vegetable oil, ½ cup of milk, and 1 teaspoon of vanilla extract.
  4. Stir the pumpkin mixture into the dry ingredients until just combined.
  5. Divide the batter among the muffin cups, filling them each about ¾ full.
  6. Stir the remaining flour, granulated sugar, and pumpkin pie spice together with the brown sugar.
  7. Mix in the melted butter, stirring with a fork until crumbs form.
  8. Spoon the streusel evenly over the muffin batter.
  9. Bake the muffins for 20 to 22 minutes, until they are golden brown and a wooden toothpick inserted into the center comes out clean.
  10. Beat the cream cheese until smooth.
  11. Stir in the powdered sugar and the remaining vanilla.
  12. Stir in the remaining milk a bit at a time until the frosting is thin enough to drizzle (you may not need all of the remaining milk).
  13. Drizzle the glaze over the cooled muffins, then serve.
