Simple Seasoned Sushi Rice Recipe

Ingredients
  • 2 cups white, short-grain rice
  • 3 cups water
  • 4-inch square piece of kombu
  • ΒΌ cup rice vinegar
  • 4 teaspoons sugar
  • 1 teaspoon salt
Directions
  1. Rinse the rice in a colander for 3 minutes.
  2. Put the rinsed rice in a pot with the water and let soak for 30 minutes.
  3. Add the kombu strip to the pot, bring to a boil, then simmer covered for 20 minutes.
  4. Add the vinegar, sugar, and salt to a small pot and whisk over medium heat for 5 minutes.
  5. When the rice is done, discard the kombu piece and transfer the rice to a large bowl and let it cool for 10 minutes.
  6. Pour the vinegar mixture over the rice and stir lightly to combine.
