Take a damp paper towel and wipe the mushrooms to remove any dirt, then slice them.
Heat 1 tablespoon of oil in a large skillet on medium-high heat. Add half of the mushrooms to the pan and cook for 2 minutes undisturbed, then stir and cook for 2 more minutes. Move these mushrooms to the side of the pan, add the remaining oil and the rest of the mushrooms, and repeat the process.
Now, lower the heat to medium and move all of the mushrooms to the perimeter of the pan. Add the butter in the middle and once that is melted, add the garlic, salt, and pepper. Stir the garlic to avoid burning and cook for about 2 minutes.
Raising the heat to medium-high, add the wine and cook for 3 minutes.
Remove the mushrooms from heat, add chives, and serve.
