Olive Oil Chocolate Chip Banana Bread Recipe

Ingredients
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup olive oil
  • ½ cup packed brown sugar
  • ½ cup granulated sugar
  • 1 ½ cups overripe bananas, about 3 medium bananas, mashed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup semi-sweet chocolate chips, plus more for sprinkling on top
Directions
  1. Preheat the oven to 325 F. Grease a 9-×5-inch loaf pan with cooking spray or butter. In a medium bowl, whisk together the flour, baking soda, and salt.
  2. In a separate large bowl, combine the olive oil, brown sugar, and granulated sugar until mixed. Add the mashed bananas, eggs, vanilla extract, and sour cream to the large bowl, and mix until combined.
  3. Mix the dry ingredients into the bowl with the wet ingredients, then fold in the chocolate chips.
  4. Pour the batter into the prepared loaf pan, and spread it evenly. Sprinkle extra chocolate chips on top of the batter, if desired.
  5. Bake the bread for 1 hour to 1 hour 15 minutes in the preheated oven, until it is golden brown, and a toothpick inserted into the center comes out with a few moist crumbs. Let the bread cool completely before removing it from the pan, then slice and serve.
