Yaki Onigiri Recipe

Ingredients
  • 2 cups sushi rice
  • 2 tablespoons soy sauce
  • 1 tablespoon white miso paste
  • 1 tablespoon mirin
  • 3 tablespoons butter
  • 2 tablespoon chives, chopped
  • 6 nori sheets, whole or sliced into strips
Directions
  1. Rinse the rice thoroughly for at least 2 minutes. Then, cook it according to package instructions.
  2. In a small bowl, combine the soy sauce, miso paste, and mirin. Set this aside.
  3. When the rice is done, pour the sauce over the rice, and stir gently to combine. Let the rice cool for 15 minutes, or until it is cool enough to handle.
  4. Then, shape the rice into 6, 2-inch thick triangles. You can use an onigiri mold for this, or use a square 4-inch Tupperware or glass dish. Press the rice firmly into 3 corners of the dish to create a triangle. Turn upside down to release the triangle, and use your hands to make sure it is held tightly together. Alternatively, you can divide the rice into 6 sections, wet your hands, and shape each section into a triangle.
  5. Heat the butter in a cast iron skillet on medium-high. Work in batches, if necessary. Add the rice triangles, and sear for 2 minutes on each side. Top the yaki onigiri with diced chives, and serve with nori strips.
