In a large bowl, combine the warm milk (temperature between 105 and 115 F) and the yeast. Stir lightly, then wait 10 minutes for the mixture to start bubbling.
Chop ½ cup of butter, and add it to the bowl with the honey. Beat with a hand-held mixer for a few minutes, until combined. Add in the flour and salt mixture a little bit at a time, mixing to incorporate.
Remove the dough from the bowl, and place it on a large cutting board. Knead the dough for 3 minutes. Add the oil to the inside of a clean bowl, and place the dough ball inside the bowl , turning it to coat it with the oil. Cover with a dishtowel, and let sit in a warm location for 1 hour.
Place the dough back on the cutting board, and divide into 10 sections. Shape each one into a ball, and place in a 9-x12-inch baking dish that has been sprayed with cooking spray. Cover the baking dish, and let the rolls sit for about 30 minutes. Preheat the oven to 350 F.
Bake for 18 minutes. When they are done, melt the remaining 1 tablespoon of butter, brush it over the tops, then serve.
