1 pound fresh fish, like sardines, gutted and descaled
3 tablespoons olive oil
2 garlic cloves, thinly-sliced
Pinch of chili flakes
½ tablespoon chopped fresh basil
½ tablespoon chopped fresh parsley
Lemon wedges, for serving
Directions
Mix the flour with the salt and pepper, and set aside.
Pat the fish dry before dredging it in the flour mixture, making sure to thoroughly coat it on both sides. Shake off any excess flour.
Heat up the oil in a frying pan over medium-high heat, then add the sliced garlic and a pinch of chili flakes. Allow it to fry gently for a minute, before adding the fish, frying for 3 minutes on each side.
Serve the fish hot, and sprinkle with fresh basil, parsley, and a generous squeeze of lemon.
