Ingredients
1 cup smooth almond butter
½ cup pure maple syrup
1 teaspoon vanilla
¼ cup + 2 tablespoons unsweetened cacao powder
⅔ cup almond flour
1 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
1 tablespoon powdered sugar
Directions
Combine the almond butter, maple syrup, and vanilla in a large bowl.
Combine the cacao powder, almond flour, baking soda, cinnamon, and salt in a medium bowl. Use a whisk to break down any clumps.
Add the dry ingredients to the almond butter mixture and stir well.
Transfer the mixture to the fridge for 30 minutes to firm up so it is easier to handle.
Preheat the oven to 350 F.
Scoop out 2 tablespoons of dough and form it into a ball.
Roll it in the powdered sugar, place it on a parchment-lined baking sheet, and flatten it out. Repeat the process for 11 more cookies.
Bake the cookies in the oven for 12 minutes.
Let them cool on the baking sheet for 10 minutes, then transfer them to a cooling rack for about 10 more minutes before serving.
