Preheat oven to 400 F. Peel and chop the beets, sweet potatoes, and carrots into uniform, bit-sized pieces.
Pour the oil, salt, garlic granules, rosemary, thyme, and pepper over the chopped vegetables, and stir to fully coat.
Lay the vegetables on a baking sheet in an even layer, and bake for 30 to 40 minutes, or until the vegetables are tender. Serve with fresh herbs, if desired.
