Pour the warm water into a bowl, followed by the yeast and sugar. Set aside for 10 minutes until the top is foamy.
In a large bowl, combine the flour and salt, then stir the yeast mixture into the flour.
Remove the dough from the bowl, form into a ball, and put it back in the bowl. Cover with a tea towel, and let it rest for 1 hour.
Remove the dough from the bowl, and put it on a floured work surface. Knead the dough for 5 minutes, adding more flour to the board if the dough gets sticky.
Divide the dough into 8 equal parts. Spray a 9-x12-inch baking dish with cooking spray or oil, and roll each dough section into a ball. Place each dough ball in the prepared baking dish. Cover with a tea towel, and let it rise for 1 hour. After 45 minutes, preheat the oven to 350 F.
Bake the rolls for 30 minutes, or until the tops are golden. Brush with butter, if desired, and serve the rolls warm.
