Preheat oven to 400 F. Line a loaf pan with aluminum foil and spray it with nonstick spray. Set aside.
Heat a large skillet over medium-low heat. Add the onion and cook until it softens, about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the mushrooms, ½ teaspoon salt, and ¼ teaspoon pepper to the skillet. Cook until the liquid that the mushrooms release cooks away, about 10 minutes. Remove from the heat and let cool for at least 5 minutes.
Meanwhile, combine the breadcrumbs, potato chips, and milk in a small bowl.
Add the ground turkey to a large bowl. Add in the mushroom mixture, the breadcrumb mixture, the remaining ½ teaspoon salt, ¼ teaspoon pepper, Worcestershire sauce, and eggs. Use a rubber spatula or your hands to gently mix everything together.
In another small bowl whisk together the ketchup, maple syrup, and Dijon mustard.
Spread the turkey mixture evenly into the prepared loaf pan. Spread the ketchup glaze over the turkey.
Bake in the preheated oven for 45 to 50 minutes, until a thermometer inserted into the center of the meatloaf registers 165 F.
Let sit for 10 minutes, garnish with parsley if desired, then slice and serve.
