Add the star anise, cassia bark, fennel seeds, and cloves to a pan and dry toast them on a low heat for just a few minutes until fragrant, moving the spices around the pan.
Remove the spices from the pan and place them in a spice grinder along with the ground ginger, then grind the spices together for 20-30 seconds until they are reduced to a powder.
Transfer the powder to a small glass jar and store in a cool, dry place.
