Jalapeño-Lime Three Bean Salad Recipe

Ingredients
  • 1 English cucumber
  • 1 red pepper
  • 1 green pepper
  • 1 large tomato
  • 1 jalapeño
  • 1 avocado
  • 3 scallions
  • 1 can black beans, rinsed and drained
  • 1 can garbanzo beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 2 tablespoons olive oil
  • 1 tablespoons apple cider vinegar
  • Juice of one lime
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Directions
  1. Dice the cucumber, red pepper, green pepper, tomato, jalapeño, avocado, and scallions. Put these in a large bowl.
  2. In a small bowl, combine the olive oil, vinegar, lime juice, cumin, salt, and pepper.
  3. Add the chopped vegetables and the drained beans to a large bowl. Toss the dressing over the salad and serve.
