Jalapeño-Lime Three Bean Salad Recipe

Ingredients
1 English cucumber
1 red pepper
1 green pepper
1 large tomato
1 jalapeño
1 avocado
3 scallions
1 can black beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 can kidney beans, rinsed and drained
2 tablespoons olive oil
1 tablespoons apple cider vinegar
Juice of one lime
1 teaspoon cumin
½ teaspoon salt
¼ teaspoon pepper
Directions
Dice the cucumber, red pepper, green pepper, tomato, jalapeño, avocado, and scallions. Put these in a large bowl.
In a small bowl, combine the olive oil, vinegar, lime juice, cumin, salt, and pepper.
Add the chopped vegetables and the drained beans to a large bowl. Toss the dressing over the salad and serve.
