Combine turkey, mayo, garlic, sage, salt, and pepper in a bowl until just combined.
Form the turkey into ΒΌ-inch thick patties, about 3 inches wide. Place on a parchment lined sheet.
Place turkey burgers in the freezer, and once frozen, place into freezer-friendly bags or containers. If using immediately, keep in the freezer while preparing a skillet to cook.
To cook sausage patties, heat an oiled skillet over medium heat. Place turkey burgers into skillet and cook until dark brown on either side, about 5 minutes per side. Turkey sausage will shrink in the heat. Serve hot.
