Simple Blueberry Bread Recipe

Ingredients
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs, large
  • ½ cup milk
  • 2 tablespoons lemon juice
  • 1½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon coriander
  • 1 pint fresh blueberries
Directions
  1. Preheat the oven to 350 F. Grease a 9×5-inch loaf pan, then set it aside.
  2. In a large-sized bowl, beat the butter until it is creamy. Add the sugar and beat until the mixture is fluffy. Add in the eggs, milk, and lemon juice, and beat until combined.
  3. In a separate, medium-sized bowl whisk together the flour, baking powder, salt, and coriander.
  4. Add the flour mixture into the bowl with the wet ingredients and beat until just combined.
  5. Fold the blueberries into the batter gently. Spread the batter evenly into the prepared loaf pan.
  6. Bake in the preheated oven for 55–60 minutes, until a toothpick comes out clean. Cool completely, then cut and serve.
