Put the sugar, water, and lavender in a medium pot and bring the heat to medium.
Stir frequently for 5 minutes or until all the sugar is dissolved. Remove from the heat, cover and let it steep for 10 minutes.
Pour it into a mesh strainer that is positioned over a bowl. Discard the lavender. Pour the lavender syrup into an air-tight container and keep in the fridge for 2 weeks.
