Instant Pot Syracuse Salt Potatoes Recipe

Ingredients
  • 3 cups filtered water
  • ½ cup sea salt
  • 1 ½ pounds small Yukon gold potatoes
  • ¼ cup butter, melted
Directions
  1. Put the water and salt into the Instant Pot. Select the sauté button and stir for 2 minutes to dissolve the salt.
  2. Put the potatoes in an Instant Pot steamer basket if you have one and place that inside the Instant Pot. If you don't have a steamer, just add the potatoes directly to the water.
  3. Secure the lid on the Instant Pot and make sure the nozzle is set to "sealing." Then select pressure cook and set the time to 2 minutes. The Instant Pot will take about 15 minutes to come to pressure. When the cooking time is done, let the potatoes sit in the Instant Pot for a natural release of 15 minutes. At that point, switch the nozzle on the lid to venting. Stand back just in case there is any remaining steam left that will release out of the top of the lid.
  4. When the potatoes are done, test them with a fork to make sure they are tender. Then transfer them to a bowl and pour on the melted butter and garnish with freshly chopped parsley if desired.
