Ingredients
2 tablespoons whole black peppercorn
21/2 tablespoons crispy fried garlic
1 tablespoon piment d'Espelette
1 tablespoon fennel pollen
1 tablespoon kosher salt
Directions
Using a blender or spice grinder, pulse the peppercorns until finely ground. Add to a small bowl.
In the same blender, blend the fried garlic until finely ground, taking care not to over-blend.
Add piment d'Espelette, fennel pollen, and salt to the bowl.
Whisk thoroughly to combine. Store tightly at room temperature.
