Soba Noodle and Bok Choy Stir-Fry Recipe

Ingredients
  • 2 bundles of soba noodles or 2/3 of a (9 ounce) package
  • 4 baby bok choy
  • 1 container (8 ounces) mushrooms
  • 4 cloves garlic
  • 1 inch of ginger root
  • 3 scallions
  • 3 tablespoons of olive oil, divided
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • Juice of one lemon
  • 1 teaspoon sriracha
Directions
  1. Start cooking the soba noodles according to package instructions. Drain in a colander when they are done.
  2. While the noodles are cooking chop the baby bok choy separating the white part from the green leaves. Slice the mushrooms, mince the garlic, grate the ginger root (after peeling), and chop the scallions.
  3. Add 1 tablespoon of the oil to a large frying pan. Bring heat to medium high and add the garlic and ginger. Stir for about 3 minutes. Now add the white part of the baby bok choy and the mushrooms. Sauté for about 5 to 8 minutes until the mushrooms have reduced in size.
  4. While that is cooking in a small bowl combine 2 tablespoons of olive oil, sesame oil, maple syrup, the juice of one lemon, and the sriracha.
  5. Now add the bok choy greens, cooked soba noodles, and the sauce to the pan. Stir to combine and top with the chopped scallions and optional sesame seeds and serve.
