Korean BBQ-Inspired Lentils Recipe

Ingredients
  • ½ onion
  • 2 cloves garlic
  • 2 scallions
  • 1 Asian pear
  • 1 tablespoon oil
  • 1 cup red lentils
  • 2 cups + 1 tablespoon water, divided
  • ¼ cup soy sauce
  • ½ teaspoon ginger powder
  • 1 teaspoon sesame oil
Directions
  1. Chop the onion, garlic, scallions, and the Asian pear (half if the pear is particularly large).
  2. Add the Asian pear to a blender with 1 tablespoon of water and blend into a puree. Mix with the soy sauce, ginger powder, and sesame oil. If you want to add some extra sweetness, add 1-2 tablespoons of brown sugar.
  3. Add the olive oil to a large frying pan and bring the heat to medium heat. Drop in the onion and garlic and sauté for 3 minutes.
  4. Now add the lentils, 2 cups of water, and the sauce to the pan. Reduce heat to low and cook for 20 minutes or until the lentils are soft and most of the water is absorbed. Top with the chopped scallions and the red lentils are ready to serve either alone or on a bed of rice.
