Shredded Chicken Quesadilla Recipe

Ingredients
  • 2 cups shredded chicken
  • 1/4 cup salsa roja
  • 2 tablespoons unsalted butter
  • 2 (8-inch) flour tortillas
  • 1 1/2 cups shredded Chihuahua-style cheese
Directions
  1. In a medium bowl, combine chicken and salsa. Set aside.
  2. Heat a cast iron pan over a medium heat. Add one tablespoon butter and swirl to coat pan.
  3. Add one tortilla to pan and sprinkle 1/2 cup cheese over one half. Top with 1/2 cup chicken then another 1/4 cup cheese. Let cook until cheese begins to melt on bottom.
  4. Use a spatula to flip the empty side of the tortilla over the chicken and cheese. Flip the whole thing over so the cheese on the top can melt. Continue to cook until tortilla is golden brown and cheese is completely melted.
  5. Transfer to a cutting board and cut. Repeat steps with remaining tortilla, chicken, and cheese. Serve with guacamole.
