Rich Turkey Tomato Bolognese Recipe

Ingredients
  • 2 tablespoons cooking oil, divided
  • 1 pound turkey mince
  • Salt and pepper, to taste
  • 1 large onion, finely chopped
  • 1 large carrot, finely chopped
  • 2 sticks celery, finely chopped
  • 2 cloves garlic, crushed
  • 1 cup white wine
  • 1 (14 ounce) can chopped tomatoes
  • 1 tablespoon tomato purée
  • 1 teaspoon granulated sugar
  • 1 cup chicken stock
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 tablespoons whole milk
Directions
  1. Heat up a large, heavy bottomed pan to a medium heat. Add one tablespoon of cooking oil to the pan and then add the turkey mince, season well with the salt and pepper, and proceed to gently brown the meat for 5 to 10 minutes. Remove from the pan and set to one side.
  2. Add the remaining tablespoon of oil to the pan, along with the chopped onion, carrot, and celery. Fry for another 5 to 10 minutes until softened, then add the crushed garlic and cook for another minute or two until fragrant.
  3. Return the turkey mince to the pan and add the white wine. Cook for 5 minutes then add the chopped tinned tomatoes, the tomato purée, the sugar, the dried thyme, the bay leaf, and the chicken stock to the pan. Season with salt and pepper, and then allow everything to gently simmer for 1 hour, stirring occasionally.
  4. After an hour, add the milk to the pan and let everything cook for another 10 minutes before serving.
