Spicy Vegan Jambalaya Recipe

Ingredients
  • ½ red onion
  • 3 stalks celery
  • 1 red pepper, diced
  • 3 cloves garlic, minced
  • 2 links vegan spicy Italian sausage
  • 1 tablespoon oil
  • 2 cups cooked rice
  • 1 can (15-ounce) kidney beans, rinsed and drained
  • 1 can (14-ounce) diced tomatoes
  • 2 tablespoons soy sauce
  • 2 teaspoons oregano
  • 1 teaspoon basil
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon red Tabasco sauce
Directions
  1. Chop the red onion and celery, dice the red pepper, and mince the garlic. Slice the vegan sausage into coins, keeping the casing on.
  2. Add the oil to a large frying pan and bring the heat to medium high. Cook the onion and garlic for 3 minutes. Then add the celery, red pepper, and sausage. Cook for about 10-15 minutes stirring frequently.
  3. Stir in the rice, kidney beans, tomatoes, soy sauce, oregano, basil, Cajun seasoning, salt, smoked paprika, and Tabasco. Let this simmer for 10 minutes stirring occasionally.
  4. Top the spicy vegan jambalaya with chopped parsley if desired and serve.
