Rough chop the onion, garlic, and habanero pepper (remove seeds first).
Put the onion, garlic, peppers, lime juice, soy sauce, maple syrup, allspice, ginger, nutmeg, salt, and thyme into a blender and blend until smooth.
Remove the packaging from the tofu and wrap it in paper towels to dry off any moisture. Cut the tofu block into four equal pieces. Pour half of the marinade into the container and place in the pieces of tofu. Then pour the remaining marinade on top of the tofu. Put the lid on, put in the fridge, and marinate for a minimum of 2 hours.
Heat up the grill on medium low. Place the tofu directly on the grates or in a grill pan. Grill for 12–15 minutes, flipping halfway. The jerk-marinated tofu is ready to serve.
