Malibu Barbie Cocktail Recipe

Ingredients
2-4 tablespoons pink rimming sugar
½ cup water
½ cup granulated sugar
2 tablespoons dried hibiscus flowers
4 ounces pineapple nectar or juice
2 ounces cranberry juice
4 ounces Malibu rum
Ice, as needed
4-6 ounces Sprite, to taste
Directions
Moisten the rim of two cocktail glasses with water and coat them with pink rimming sugar, then set aside.
Combine the water, granulated sugar, and dried hibiscus flowers in a small saucepan.
Bring the mixture to a boil over medium heat for approximately 5 minutes, stirring until the sugar dissolves.
Remove from heat and let the hibiscus continue to steep until the simple syrup is dark red.
Strain out the hibiscus flowers and let the syrup cool completely.
In a cocktail shaker, add the pineapple juice, cranberry juice, Malibu rum, and 2 ounces of hibiscus simple syrup (reserve the rest for another use).
Fill the shaker with ice and shake vigorously to combine the ingredients.
Fill the cocktail glasses with ice.
Strain and divide the cocktail mixture equally into the glasses.
Top off each glass with Sprite and gently stir the cocktails.
Garnish each glass with 2 pineapple leaves, a pineapple slice, and a cherry, if desired.
