Ingredients
1 (5-ounce) can solid white albacore in water, drained
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon chopped chives
1 teaspoon chopped parsley
1 teaspoon chopped dill
Kosher salt and pepper
4 slices whole wheat sourdough bread
1 cup arugula
Directions
Mix together the tuna, mayonnaise, mustard, lemon juice, and herbs. Season to taste with salt and pepper.
Toast the bread.
Add the arugula between two slices of bread.
Divide the tuna salad between the two slices of bread with arugula.
Top each with remaining slices of bread. Cut in half to serve.
