Wash the sweet potatoes (no need to peel them) and cut into ¼-inch thick fries.
In a medium bowl, combine the olive oil, truffle oil, truffle zest, chipotle powder, and salt. Whisk until combined.
Add the sweet potato fries to the bowl and toss until evenly coated in seasonings.
Carefully remove the sheet pan from the oven and lower the heat to 450 F. Arrange the fries on the pan in a single layer and bake for approximately 20 minutes, turning halfway through, until crispy.
For extra crispy fries, broil for 3-5 minutes, if desired.
Remove the fries from the oven and sprinkle with flaky salt and chopped parsley, if desired. Serve right away.
