- 1 tablespoon rice flour
- 1 teaspoon fennel seeds
- 1 teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon ground cinnamon
- ½ teaspoon sumac
- ½ teaspoon garlic powder
- Chili flakes, to taste
- 1 pound ground beef
- 1 large egg, at room temperature
- ¼ cup chopped fresh cilantro
- Salt and pepper, to taste
- 1 tablespoon cooking oil
- Heat up a grill or broiler.
- In a small bowl, mix together the rice flour, fennel seeds, onion powder, ground cumin, ground coriander, ground cinnamon, sumac, garlic powder, and chili flakes.
- Place the ground beef into a large bowl, then add the spice mixture, egg, chopped cilantro, and salt and pepper.
- Using your hands, mix the ingredients together until well combined.
- Roughly divide the mixture into 6 portions.
- Roll each portion of beef into a sausage shape around a metal or bamboo skewer, then set them on a plate.
- When the grill or broiler is ready, brush the kofta with oil and place them onto the hot surface.
- Cook the kofta for 6 minutes, then flip to cook for another 6 minutes on the other side until the exterior is browned and the beef is cooked through.
- Serve hot.
