Preheat your waffle iron while you make the cookie batter.
In a medium bowl whisk together the flour, baking powder, and salt until combined. Set aside.
In a large bowl add the butter, granulated sugar, and brown sugar. Cream them together until the mixture is light and fluffy.
Add the eggs, vanilla extract, and maple extract to the butter and sugar mixture bowl and mix until well combined.
Add the flour mixture to the bowl and mix until the batter is just combined.
Use a small cookie scoop to scoop batter into the hot waffle iron. Close the waffle iron and cook the cookies until they are golden brown, about 3–4 minutes.
Use tongs to carefully remove the cookies from the waffle iron. They will be soft when you remove them from the iron, but will become crispy as they cool. Repeat with the remaining cookie dough until all the batter is baked.
