Wheat Berry and Pomegranate Salad Recipe

Ingredients
  • 3 cups cooked wheat berries
  • 1/3 cup crumbled feta
  • 1/3 cup pomegranate arils
  • 1/4 cup chopped Marcona almonds
  • 2 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • 2 tablespoons fresh mint
  • 2 tablespoons fresh dill
  • 11/2 cups arugula
Directions
  1. In a large bowl, combine the wheat berries, feta, pomegranate arils, and almonds.
  2. Drizzle in the olive oil and red wine vinegar. Briefly toss to combine.
  3. Chop the herbs and fold them in along with the arugula.
  4. Season to taste and serve.
