Vegetarian Lo-Mein Recipe

Ingredients
  • 8 ounces dry lo mein noodles
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 1 cup chopped snow peas
  • 1 red pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • ¼ cup soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons coconut sugar
  • 2 teaspoons sriracha
  • 2 cups spinach
  • 3 scallions, chopped
Directions
  1. Cook the lo mein noodles according to the package instructions (about 5 minutes).
  2. Add the oil to a large frying pan and bring the heat to medium.
  3. To the pan, add the mushrooms, snow peas, red pepper, garlic, and ginger. Sauté for 8 minutes, stirring frequently.
  4. In a small bowl, combine the soy sauce, sesame oil, coconut sugar, and sriracha.
  5. Add the cooked noodles, sauce, and spinach to the frying pan.
  6. Stir to combine and let the spinach wilt, then top with scallions, optional sesame seeds, and serve.
