Baked Brioche-Crusted Salmon Recipe

Ingredients
5 tablespoons kosher salt, plus more to taste
2 quarts water
2 pounds center-cut salmon fillet, cut into 4 fillets
2 slices brioche bread
4 tablespoons salted butter, melted
2 tablespoons honey mustard
pepper, to taste
Directions
Move the rack to the middle of the oven and preheat to 350 F.
In a large bowl, dissolve 5 tablespoons of kosher salt in 2 quarts of water.
Place the salmon in the brine and let it soak at room temperature for 15 minutes.
Remove the salmon from the brine, pat it dry, and set it aside.
Cut the brioche into 1-inch cubes and spread them out on a baking sheet in a single layer.
Bake for 10 minutes, tossing halfway through until golden brown.
Transfer the toasted brioche cubes to the bowl of a food processor.
Add the melted butter and pulse into coarse bread crumbs.
Lightly coat a baking sheet with neutral oil or cooking spray.
Evenly space the salmon fillets skin-side down on the sheet.
Spread honey mustard on top of each fillet and season with salt and pepper.
Sprinkle the brioche crumbs evenly over the top, pressing with your fingers to make them adhere.
Bake for 15 to 20 minutes, depending on desired doneness.
Serve right away.
