Mix olive oil, lemon juice, parsley, garlic, salt, and pepper in a small bowl.
Thread shrimp onto skewers and pour 3/4 of the marinade over them.
Preheat oven to the grill or broil setting, choosing high broil if given the option. Arrange shrimp skewers on baking sheet. Broil shrimp skewers for 2–3 minutes on each side or until pink and opaque.
Remove from oven and spoon remaining marinade on top before serving.
Serve shrimp kabobs with additional lemon wedges. Leftover shrimp should be removed from the skewers and kept in an airtight container for up to 4 days.
