Parmesan-Crusted Fried Chicken Breast Recipe

Ingredients
  • 4 chicken breasts
  • 2 large eggs
  • 1 cup unseasoned breadcrumbs
  • ¾ cup Parmesan cheese, grated
  • 1 teaspoon granulated garlic
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon chopped fresh basil
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 3 tablespoons light olive oil, plus more as needed
Directions
  1. Cover the chicken with plastic wrap, then use a meat mallet or rolling pin to pound it. Start in the center and work your way outward until the meat is even and about ½-inch thick. Repeat the process until all the pieces are consistent in thickness.
  2. Whisk the eggs in a large dish or on a slab plate and place them aside.
  3. Combine the breadcrumbs, Parmesan cheese, garlic, rosemary, oregano, basil, black pepper, and salt in a separate large dish or slab plate and stir until well combined.
  4. Arrange the breading station with the chicken on the far left. Dip the chicken in egg, coat it in seasoned breadcrumbs, pressing to ensure even coverage, then place it on a plate. Repeat with all the pieces.
  5. Heat a nonstick skillet over medium heat, then add the oil and place the chicken in a single layer. (Cook it in batches to avoid overcrowding and add more oil if necessary.)
  6. Flip the chicken after 6 to 7 minutes or until golden brown on the bottom and continue to fry until both sides are golden. Repeat until all the chicken is fried.
  7. Serve immediately or keep warm in a 250 F oven for up to 1 hour before serving.
  8. Garnish with lemon wedges and fresh basil.
