Limey Black Bean Couscous Salad Recipe

Ingredients
  • 1 cup pearl couscous, uncooked
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 red pepper, chopped
  • 2 cups corn
  • ½ cup chopped cilantro
  • 3 scallions, chopped
  • 3 tablespoons olive oil
  • Juice of 2 limes
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon garlic granules
  • 1 teaspoon pink Himalayan salt
  • ½ teaspoon cumin
  • ¼ teaspoon pepper
Directions
  1. Cook the couscous according to package directions. Drain.
  2. In a large bowl, combine the black beans, red pepper, corn, cilantro, and scallions.
  3. In a small bowl combine the olive oil, lime juice, apple cider vinegar, garlic granules, pink Himalayan salt, cumin, and pepper.
  4. Add the cooked couscous and dressing. Toss and serve.
