Limey Black Bean Couscous Salad Recipe

Ingredients
1 cup pearl couscous, uncooked
1 (15-ounce) can black beans, rinsed and drained
1 red pepper, chopped
2 cups corn
½ cup chopped cilantro
3 scallions, chopped
3 tablespoons olive oil
Juice of 2 limes
1 teaspoon apple cider vinegar
1 teaspoon garlic granules
1 teaspoon pink Himalayan salt
½ teaspoon cumin
¼ teaspoon pepper
Directions
Cook the couscous according to package directions. Drain.
In a large bowl, combine the black beans, red pepper, corn, cilantro, and scallions.
In a small bowl combine the olive oil, lime juice, apple cider vinegar, garlic granules, pink Himalayan salt, cumin, and pepper.
Add the cooked couscous and dressing. Toss and serve.
