Ingredients
1 teaspoon dried pimento berries (whole allspice)
½ teaspoon nutmeg
5 cloves garlic
2 Scotch bonnet peppers
½ medium onion
1 teaspoon dark brown sugar
1 teaspoon dried thyme
½-inch knob ginger
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon vinegar
½ teaspoon ground cloves
3 green onion stalks, greens only, plus more for garnish
4 bone-in pork chops
Directions
Grind up all of the ingredients except the pork chops in a food processor to make a paste.
Rub the jerk paste all over the pork chops and marinate them for at least 1 hour, or up to 12 hours.
Preheat the grill or grill pan to medium-high heat. If using an outdoor grill, oil the grates to prevent sticking.
Grill the pork chops for 4 to 5 minutes per side until they reach an internal temperature of 145 F.
Let the pork chops rest for a few minutes before cutting into them.
Garnish the pork chops with chopped green onions if desired.
