Jerk-Marinated Pork Chop Recipe

Ingredients
  • 1 teaspoon dried pimento berries (whole allspice)
  • ½ teaspoon nutmeg
  • 5 cloves garlic
  • 2 Scotch bonnet peppers
  • ½ medium onion
  • 1 teaspoon dark brown sugar
  • 1 teaspoon dried thyme
  • ½-inch knob ginger
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon vinegar
  • ½ teaspoon ground cloves
  • 3 green onion stalks, greens only, plus more for garnish
  • 4 bone-in pork chops
Directions
  1. Grind up all of the ingredients except the pork chops in a food processor to make a paste.
  2. Rub the jerk paste all over the pork chops and marinate them for at least 1 hour, or up to 12 hours.
  3. Preheat the grill or grill pan to medium-high heat. If using an outdoor grill, oil the grates to prevent sticking.
  4. Grill the pork chops for 4 to 5 minutes per side until they reach an internal temperature of 145 F.
  5. Let the pork chops rest for a few minutes before cutting into them.
  6. Garnish the pork chops with chopped green onions if desired.
