1 (3.5 pound) seedless watermelon, cut into chunks
1 cup fresh mint leaves, loosley packed
½ cup lime juice
¼ cup simple syrup
1 cup light rum
Directions
Use a blender or a juicer to puree the watermelon cubes until smooth. If desired, pour the juice through a fine-mesh strainer to remove the pulp from the juice (optional). You should get about 3 cups of watermelon juice.
Add the mint leaves, lime juice, and simple syrup to a pitcher with ice. Stir to combine.
Add the rum and watermelon juice to the pitcher. Stir well until combined.
Pour the mojito into glasses and garnish with limes, mint, and watermelon slices if desires.
