Cider-Glazed Root Vegetables Recipe

Ingredients
2 cups chopped sweet potato
2 cups purple sweet potato
1 cup chopped carrots
1 cup chopped parsnips
1 chopped onion
2 tablespoons avocado oil
1 teaspoon salt
3 cups apple cider
1 cup white vinegar
2 tablespoons sugar
Directions
Preheat oven 400 F.
Add the sweet potatoes, carrots, parsnips, and onion to a bowl and toss with oil and salt.
Spread the vegetables on a baking sheet and bake for 30 minutes.
Add the apple cider, vinegar, and sugar to a medium pot and bring to a boil.
Reduce the heat to medium high heat and cook for 50-60 minutes until it has reduced to ⅓ cup and is very thick.
Spoon the glaze over the cooked vegetables.
Serve the cider-glazed root vegetables. Top with fresh herbs if desired.
