Air Fryer Bacon-Wrapped Meatloaf Recipe

Ingredients
  • 2 eggs
  • 1 tablespoon Italian seasoning
  • 2 teaspoons sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground pepper
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 pound lean ground beef
  • 1 pound ground pork
  • ½ onion, diced
  • ½ cup Italian breadcrumbs
  • 8 slices bacon
  • Cooking spray
  • ⅓ cup ketchup
  • 2 tablespoons brown sugar
  • 2 teaspoons white wine vinegar
Directions
  1. Add eggs to a medium-sized bowl and whisk.
  2. Add Italian seasoning, salt, onion powder, pepper, garlic, and Worcestershire sauce to eggs, mix well.
  3. Place ground beef and pork in a large bowl. Add onions, breadcrumbs, and egg mixture and combine gently using a wooden spoon or hands.
  4. Form the meat mixture into a loaf.
  5. Arrange 3 slices of bacon lengthwise on meatloaf and 5 slices crosswise. Tuck the ends of the bacon under the meatloaf.
  6. Spray the air fryer basket with cooking spray.
  7. Place meatloaf into basket and add to air fryer. Cook at 350 F for 40 minutes.
  8. While meatloaf is cooking, prepare the glaze: add ketchup, brown sugar, and vinegar to a small bowl. Mix well.
  9. After 40 minutes, carefully remove air fryer insert and brush ½ of the glaze over meatloaf. Turn air fryer down to 325 F. Return meatloaf to air fryer and continue cooking for 20 minutes or until internal temperature reaches 160 F.
  10. Remove meatloaf from air fryer, brush on remaining glaze and let sit for 5 minutes.
  11. Slice and serve immediately.
